UiPath Studio 2023.10.0 EnterPrise Licenseの初心者ユーザです。
UiPath Assistantでパッケージを実行したいのですが、いつも最新バージョンが表示されます。
古いバージョンを実行する方法が分かりませんので、分かる方、お手数ですが、画像で古いバージョンの選択方法をご教示いただけないでしょうか。

Assistant always get the last version of the automation from orchestrator. If you need for some reason run old version you have some options:
1 → Rollback the process to old version
In this scenario all attended users will be use the downgraded version (if the automation didn’t published to personal workspace)
2 → Create new Process using the same package choosing the desired version.
In this scenario users will have two different processes that uses the same package available in Assistant
To downgrade to low version, go to Orchestrator > Automation Folder > Automations > Processes > Choose the desired Automation and click in tree dots then Edit. Choose the desired version.
To create new Process using the same package go to Orchestrator > Automation Folder > Automations > Processes > Add process > Choose the same package and the desired version

Do you mean you are publishing the package locally ?

UiPath Assistantでは古いバージョンのプロセスを実行することができませんので
Orchestrator未接続の環境では、所定の場所にある新しいパッケージおよびその展開したものを削除する必要があります。
具体的には（デフォルト設定時）
C:\ProgramData\UiPath\Packages
以下にある当該バージョンのnupkgファイルを削除します。
またバージョンによっては以下nupkg展開先の当該バージョンのフォルダの削除も必要です。
（相対パスでプロジェクトフォルダにデータを書き込んでいる場合は、事前にそれを退避させる必要があるかもしれません）
c:\Users\[ユーザー名]\.nuget\pacakges\[パッケージ名]\[バージョン]

古いバージョンのパッケージをUiPath Assistantから実行するのは運用が大変そうなので、WFのどこかを修正したら、プロセスを都度パブリッシュしてVerUPするのが現実的と思われますが、いかがでしょうか。
Orchestratorの無いスタンドアローン環境でしたら、その運用の方が良いかと思います。
