If I do a change in the Excel file linked to the project, should I publish the project again in order to have the process updated under UIpath Assistant ??

Hello,

Yes, you need to publish it again, whatever changes you did and you want to run that in Assistant need to re-publish.

Since excel file is in the project folder we have to publish it each and every time before executing project from uipath assistant.you can place file in the outside of project folder or in shared folder path and configure excel path in your config excel so that you no need to deploy each and every time.
