Document Understanding without Data Manager

Hello,
we successfully managed to install the AI Center (on premises) including the Out of the Box packages. We didn’t install the Data Manager.
We got two use cases and even after reading the documentation, browsing through the web and watching different YouTube videos as well, there are still some questions.

1. Use Case: Extracting data of an Invoice with additional field
By using the Invoice package there are already pre trained fields available which is really useful. But how to add an additional field to this model?

2. Use Case: Extracting data of an semi-structured document
Multiple information (e.g. table data) need to be extracted from multiple PDF-files with 20 pages each. So I have to define the fields first. I am using the Out-of-the-box package ‘DocumentUnderstanding’. For that, you have to create a custom Python ML model. The problem is that I cannot find any tutorials or even how to start.

Are these things possible without using the Data Manager?
