Data extraction from Document Understanding

Can document understanding activity process any document other than

  1. Invoice processing
  2. Receipt processing
  3. Purchase Order processing

I want to extract details from a pdf (Supplier Document Review) but OCR is not working so i thought of using Document Understanding but i am confused if i can use it to extract data

The pdf pages of that files are shown below:
