Using OCR to read Purchase Order Scanned Images PDF with varying lines lengths

Hi! I am trying to do the following tasks: reading Scanned Images POs with varying line items. However, I face a difficulty that is how do I programme it such that the OCR is smart enough to detect there is varying line lengths for the selected PO?
