Bug Report - System.Activities.statements.Assign activity throws Cannot implicitly convert type 'object' to 'string'. An explicit conversion exists (are you missing a cast?)

I had the same issue today with a multiple assign in 2021.10.5 To fix it I opened the XAML into notepad, and changed the “object” references to “string” and this fixed the issue. Unfortunately I can’t remember the steps I used when creating the multiple assign.

Copying from one list to another

Use Debug instead of Run. Then right-click your activities and set breakpoints. It’ll pause at each breakpoint and then you can look at the debug panels on the left to see the realtime values of each variable/list.
