Can I switch to UiPath Community edition after my 60 days trial of UiPath Enterprise edition expires?

Yes you can switch it back to community. You will have to take the backup of all of your packages if deployed anything and all other required data.

Once done, you will have delete the organisation from admin panel and create new one.
