is there any UiPath documentation where the management of data on the database during the creation, use and data retention phase of the database is made explicit?

If you are talking about Orchestrator database, UiPath support team could help with that if you are on Enterprise license.

If you are a on prem user…then that depends on your IT

if you are on cloud…retention policies are defined.can check here
