Can UI Path Insight be constructed using data from UI Path apps? For instance, if there are five apps, is it feasible to extract information about the apps that were active today?

There is no way to directly see apps usage in insights. What you can do it achieve this is track a particular process that is used in app and see how many times that process was executed. This should give you the app usage.
