Need help getting tables form multiple PDFs to 1 sheet in excel. The tables all have the same format, and there is only 1 table per PDF.

I have faced a similar challenge before. I believe you must check out the below link for a solution, I found it on Linked In few days ago.

I do not see a direct component yet on UiPath Community yet I believe it will be available soon however if it help you can connect with the person directly.
