I am looking for Document Understanding Use Cases that I can use for my learning purpose.
Something simple to follow and understand for a beginner like the use cases on @mukeshkala youtube page.

Have you checked the new courses in UiPath Academy ? It does involve some use cases and exercises which you could follow up accordingly as they instruct to perform. It should be able to help in you understanding different use cases and also different scenarios/challenges that arise in document understanding type of projects.

Would suggest to check on UiPath Documetn Understanding Overview if not done yet and then move towards Train ML Models for Document Understanding (This could also be taken first).
