For Pivot tables, is it possible to deselect certain values while still having the field-item auto select/check new items after adding and refreshing data to the pivot source?

You can use the filter pivot table activity.
It is not very clear what you want can you explain with data & screenshot.
From the screenshot you can assume deselection of Chatbot Feedback, Cookbook & Cancel Order is the requirement
