How do I add members(emails) to the channel?

Welcome to UiPath forum

All Microsoft Teams are backed by an Activity Directory group.

To add/remove members you will need the Active Directory activity pack which is on the official feeds.

The answer is too general.
If I want to add an email from outside my organization to the channel in Microsoft Teams.

Package: azure active directory
How do I use Add a member to a group?
What do you write in members ID ?
I only have their emails.

Fine then u can invite the member to the teams channel with this INVITE CHANNEL MEMBER activity from Microsoft teams activity package

Where this uses the Add channel member - POST API to invite a member to the channel by email.
