What should be my approach for this specific scenario?

I want to download an excel file from a website on day1, make some changes to it and save it
then on day2, I have to download another excel file from the same website which would have the same headers but with different data, after some necessary changes to it. I want to append the day2 excel file to the day1 excel file
This process will go on every day (once) so the day3 excel file should also be appended to the same day1 excel file.
My main file will be the day1 excel file, So I also want to delete those excel files(Except the day1 file) once they are appended to the day1 file

In order to develop this solution if you can access a shared file it could help you to operate in this shared file daily. (eg. Google Drive, shared files in Confluence)
On the other hand, if you don’t have the possibility described above, you can develop this solution using the Storage Buckets alternative. In this way you will handle properly the excel files. For more info about Storage Buckets, please check https://docs.uipath.com/orchestrator/docs/about-storage-buckets. (to use the Storage Buckets functionality you need as well a licensed connection to Orchestrator)
But, if any of the solutions described are not feasible for you, try to use the activities from Studio → Activities → App Integration → Excel.

Storage bucket option looks promising to me but licensed connection to the orchestrator is an issue so i think i have to deal this through excel activities

Firstly, you should install the UiPath.Excel.Activities in your development studio from Manage Packages.
After proceeding this step, try to read documentation and create a step by step template using https://docs.uipath.com/activities/docs/excel-activities
