Would be nice to have an “update informative screenshot” option alongside the “Change/Remove Informative Screenshot” in the activities for when I copy paste a selector from another activity and want to update the screenshot for better code readability.

Yes, but that requires clicking the element or selecting the area of the UI. I meant updating the screenshot based on the selector that is configured in the properties.
