Our organization is planning to upgrade our UiPath on Prem environment from 23.4.5 to 24.10.4 . Before proceeding, I wish to know of any recommended training resources or official courses to help administrators and developers carry out this upgrade.

According to the UiPath Orchestrator Upgrade path matrix you can make a direct upgrade path from 2023.4.X to 2024.10.X.
So it should not cause any issues according to this.
