I would like to extract from a table on a webpage data from one field and then add it to the current row in an Excel file. Is this possible?

Yes you can do it. If you are using the for each excel row activity to iterate each row in excel insert write cell activity inside of it and give where to write field as below,
CurrentRow.Byfield("Column name")
Give the extracted data from datatable in what to write field.
This write cell activity will update the extracted data in the specified column name in the current row.

This is a screen shot of the Extract Table Data element that I am using. When I run the project the data does not get written to Sheet1. What am I missing?

Create a variable in the output of Extract table data activity it is the datatable datatype variable. The use the write range workbook activity to write the extracted data to sheet1 in excel.
What do you want to write to excel file. Could you be more specific about the process then only we can understand.
