it seems according to youtube videos i have watched that my ribbon on the studioX seems to be a bit different
when I choose “Table extraction” I get a different action menu to deal with, also I had the feeling, again from videos I watched that I’m missing a few items:

please check and verify if you are really working on StudioX. Maybe you can post a screenshot from your UiPath Studio

Probably it depends on version of UiAutomation activities package.
If you use old version such as 20.10.x, dialog is like your first post. If can upgrade to the latest UiAutomation package such as 21.10.5, newer dialog will be shown.
Or it might be also depend on version of Studio. We might need to upgrade Studio itself.
