Processing UnStructured Letters

I am fairly new to Automation .
My current use case is as follows
Customers uses a structured form or type or hand write letters to request a withdrawl from their account.

My aim is to read the data from all 3 types using DU .
So far I have set up a DU framework and read the forms successfully using the Form extractor,
I have access to data labelling in AI Fabric.
Would the following work for both forms and unstrructured data.

  1. Using data labeling - label 20 forms (10 for train and 10 for test)
  2. Using data labeling - label 20 letters (10 for train and 10 for test)
  3. Build a Document understanding model in AI Fabric based on the above data and use ths to create a MS SKILL and use this in DU Framework to read all the information coming in .

If the form version changes in the future and some of the fields change position , can that be simply incorporated into the model , by using the training activity?
