I have a document with two multi value fields (I will showcase only one of these in the screenshots). After extraction I see they are populated with multiple values.
Any idea what happened here?
It seems that your multi-value data is getting flattened while writing back the Action Center result.
Please ensure that your field is still set as Multi Value in the taxonomy before you send the data to Action Center. UiPath expects the multi-value fields to be stored in .MultiValues property in the form of a list. oai_citation:0‡UiPath Documentation
I would also suggest you to check the version of your Document Understanding/Action Center activities. In case of tables, try to extract the table rows rather than using multi-value fields at field level, since there have been some changes related to the multi-value table extraction. oai_citation:1‡forum.uipath.com

When it comes to your first suggestion; I’m not sure how the taxonomy changes, nor where I could edit this. It’s set as multivalue in my DU model. In Action Center the field also displays as a multivalue. In my workflow, the only activities and variables I use are:
Extract Document Data
Outputvariable is generated as an IDocumentData (Var1)
Create Validation Task
input: IDocumentData (Var1)
output: UiPath.IntelligentOCR.StudioWeb.Activities.DataValidation.Variable (Var2)
Wait for Validation Task and Resume
input: UiPath.IntelligentOCR.StudioWeb.Activities.DataValidation.Variable (Var2)
output: IDocumentData (back to Var1, or a new Var3 - both show only single value in result). Do I miss an acitivity?
According to my studio I have the latest version of UiPath.DocumentUnderstanding.Activities (v3.3.0). I haven’t looked at turning the IDocumentData into a datatable or into datarows yet. According to the documentation there’s a “ResultsAsDatatable” in the Extract Document Data activity, but I don’t see this output field in my activity at all. What am I missing here?
I guess I’m gonna carefully reread the documentation, the latest update on multivalues (thank you for the link!), and just fidget with the Extract Document Data activity. It feels like I’m overlooking something obvious here.

The critical information is that you use UiPath.DocumentUnderstanding.Activities 3.3.0, where some modifications were made in the structure of DocumentData and where UiPath states that downstream processing may be impacted.
Considering that the values are correct before Action Center, but .MultiValues becomes null after Wait for Validation Task and Resume, I would start with updating the package first (3.4.x/3.5.x if possible) and retesting the exact same flow.
Moreover, ResultsAsDataTables is not required in your case; it is an alternative way to get the extracted data.
