In the latest version of Studio 2025, I am not finding how to do project level settings of modern or classic.

Modern to classic design has been removed in the latest studio
You can try forcing by changing the value in project.jaon directly..but not a recommended way..

What happens if an upgrade to current version happens for the process with the classic activities (older version)?

Activities still work..but its advised you move to modern as activities also would be depreciated soon..as of now end dates are not announced but new enhancements have stopped
Classic design is not coming anymore
