From studio, you can’t run without connecting to the orchestrator but try with command prompt as explained in this solution

You can build automations entirely on your local machine, but Community Edition still needs a one-time connection to Automation Cloud to license Studio.
Activation works by signing in with your UiPath account. This registers the machine to your Community tenant and provisions both the Studio license and an attended robot license for that machine. Once activated, you can continue working offline for a period, but Studio periodically re-validates the license, so the machine cannot remain permanently disconnected.
Being signed in is a licensing requirement, not a runtime dependency. Your automations execute locally through the robot that installs alongside Studio. Nothing is dispatched to Orchestrator unless your workflow explicitly uses Orchestrator activities (queues, assets, storage buckets, and so on).

You have to connect to the Orchestrator to manage the licence, can you explain your reason to want to stop this?
You can start your personal automations via the assistant.
