How to read and write file name with current date

Hello,
I am trying to automate a process where i get a file in the email with the filename " xyz 28.02.2018". I save this file in a folder which has files with the same name but a prior days date “xyz 27.02.2018”, “xyz 26.02.2018”. I run this process everyday so i want to read the latest file. How do i do this. And after finishing the automation I want to save it with the same date.
