May i ask is it possible to create a bot, and scrape the data related to itenary such as hotel booking or airplane booking details from email and write into excel ?

Yes, you can extract the data from the email body and save them in excel.

If all emails have the same data structure, you need to set up a bot to extract data from them once.
But if the emails contain a different data structure, you need to deal with it separately depending on the subject or any unique key
