How to extract data using OCR if the source image will be changing but the format of the image will be constant

We have a requirement where one image will be constantly coming from a source and we have to scan that image and extract data from the same. How is it possible to achieve to do with OCR?
If the source image changes then will the data scarping work?

Kindly help me solve the issue
