How does one navigate to “save for later use” in the select a value text? I cannot seem to find it.

The first screenshot shows my UiPath StudioX screen, and the second contain instructions from a Data scraping exercise. In the exercise it says to click select a value and choose save for later use. However, that selection is not available in that location. Is it located elsewhere, or do I need to use another feature entirely?
@Allison_Jackson , Use Extract to option to store the value in the Variable.
