Document Understanding and taxonomy manager limitations

Hello, experts. Does UiPath have the capability to extract data from low resolution images? What is the minimum dpi that a document needs to have in order to extract machine readable data from it? Is there any package that can be installed to help increase the dpi of a low-res document?
Also, I see that taxonomy manager can allow only up to 5 fields to be listed for a document. Is that true or am I missing something? Can additional fields be listed?
