You can train the invoice extraction model itself…there are couple of other models as well which can extract addresses can use them also…
Rememeber that you need to retrain

using document understanding you might have to train your own extraction model .
an alternative will be to use OCR to extract the text then pass it to chatgpt and ask it to extract the fields you want

this is the model that resembles your use case because there are common fields like first name last name address and you can add custom fields like phone and email
