I’m trying to write in a sentence in a word file but the word application scope activities do not allow me to center it

That’s right, you cannot do that in a single activity.

I think the workaround is to use Send Hotkey(ctrl+a & ctrl+e) or Type into([d(ctrl)]ae) after you’ve appended the text.
